Ingredients

  • 3 cups crisp apples, cored and thinly sliced
  • 2 cups seedless red grapes, halved
  • 1 cup seedless green grapes, halved
  • 2 tbsp fresh lemon juice
  • 3 tbsp honey
  • 3/4 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1/3 cup toasted sliced almonds
  • 1/4 cup fresh mint leaves, torn
  • 1/8 tsp pinch of kosher salt

Instructions

  1. 1Place the sliced apples in a large mixing bowl and immediately toss with the lemon juice so they stay bright and do not brown.
  2. 2Add the red and green grape halves to the bowl and gently fold everything together.
  3. 3In a small bowl whisk the honey, cinnamon, vanilla, and salt until the honey thins and the spices are fully dissolved.
  4. 4Pour the honey-cinnamon dressing over the fruit and toss thoroughly so every piece is lightly glossed.
  5. 5Let the salad sit at room temperature for 10 minutes so the flavors marry and the apples soften just slightly.
  6. 6Just before serving, fold in most of the toasted almonds and torn mint leaves, reserving each for garnish.
  7. 7Transfer the salad to a wide shallow platter or large serving bowl so the colors show and guests can scoop easily.
  8. 8Scatter the remaining almonds and mint over the top for a fresh finish.
  9. 9Serve immediately or chill up to 2 hours; the salad travels well in a sealed container and looks vibrant on any weekend dessert or brunch board.
