Ingredients

  • 6 medium apples
  • 2 tbsp fresh lemon juice
  • 1/3 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup brown sugar
  • 1/2 tsp kosher salt
  • 1/2 cup unsalted butter
  • for serving vanilla ice cream

Instructions

  1. 1Preheat the oven to 375°F and place a 10-inch cast-iron skillet on the counter to warm slightly while you prep.
  2. 2Peel, core, and slice the apples into even 1/2-inch wedges so they cook at the same rate.
  3. 3Toss the apple slices in a large bowl with the lemon juice, granulated sugar, cinnamon, and nutmeg until every piece is lightly coated and glossy.
  4. 4Spread the seasoned apples evenly in the skillet; they should fill it in a snug single-to-double layer without mounding too high.
  5. 5In the same bowl, stir together the flour, oats, brown sugar, and salt until no streaks of flour remain.
  6. 6Cut the cold butter into small cubes and work it into the dry mixture with your fingertips until pea-sized clumps form and the topping looks sandy yet holds together when squeezed.
  7. 7Scatter the oat topping loosely over the apples, leaving a few gaps so steam can escape and the fruit juices bubble up.
  8. 8Bake on the center rack for 35 to 40 minutes until the topping is deep golden brown, the apples are tender when pierced, and the juices are thick and bubbling at the edges.
  9. 9Remove the skillet carefully and let the crisp rest 10 minutes so the filling sets slightly.
  10. 10Scoop warm portions into bowls and top each with a scoop of vanilla ice cream so it melts into the cinnamon juices.
