Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tbsp cocoa powder
  • 3 tbsp granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp fine salt
  • 1 cup whole milk
  • 1 large egg
  • 3 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 8 oz semisweet chocolate chips
  • 1 tbsp coconut oil
  • 1/4 cup rainbow sprinkles
  • 2 tbsp freeze-dried strawberries, crushed
  • as needed nonstick cooking spray

Instructions

  1. 1Preheat a classic or Belgian waffle iron to medium. Whisk flour, cocoa powder, sugar, baking powder, and salt in a large bowl until the cocoa is evenly distributed.
  2. 2In a second bowl whisk milk, egg, melted butter, and vanilla until smooth. Pour into the dry ingredients and stir just until a thick chocolate batter forms with no dry pockets.
  3. 3Lightly spray the iron. Spread batter to the edges, close, and cook until the waffle is set, fragrant, and lightly crisp on the outside, about 3 to 5 minutes depending on your iron.
  4. 4Transfer each waffle to a cutting board and, while still warm, slice into long sticks about 1 inch wide using a sharp knife or pizza cutter so they hold their shape for dipping.
  5. 5Arrange the sticks in a single layer on a parchment-lined sheet and let them cool 5 minutes so the chocolate coating sets cleanly later.
  6. 6Melt the chocolate chips with the coconut oil in a microwave-safe bowl in 20-second bursts, stirring between each, until completely smooth and glossy.
  7. 7Dip one end of each waffle stick two-thirds of the way into the melted chocolate, letting excess drip back into the bowl.
  8. 8While the chocolate is still wet, roll or sprinkle the dipped ends with rainbow sprinkles and crushed freeze-dried strawberries for color and bright berry crunch.
  9. 9Stand the sticks upright in a glass or lay them on parchment and refrigerate 10 to 15 minutes until the chocolate shell is firm. Serve chilled or at cool room temperature as a playful handheld dessert.
