- 2 1/4 tsp active dry yeast
- 3/4 cup warm milk
- 1/3 cup granulated sugar
- 1 large egg
- 1 egg yolk
- 4 tbsp unsalted butter, softened
- 3 cups all-purpose flour
- 1/4 cup cocoa powder
- 3/4 tsp salt
- 6 cups vegetable oil for frying
- 1 1/2 cups heavy cream
- 1/2 cup powdered sugar
- 3 tbsp unsweetened cocoa powder for cream
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 1/3 cup heavy cream for glaze
Instructions
- 1Bloom the yeast in the warm milk with a spoonful of sugar until foamy and active. In a stand mixer bowl combine the remaining sugar, egg, egg yolk, and softened butter, then pour in the yeast mixture.
- 2Sift together the flour, cocoa powder, and salt, then add them to the wet ingredients. Mix on low until a soft chocolate dough comes together, then knead until smooth and slightly tacky but workable.
- 3Transfer the dough to an oiled bowl, cover, and let rise until doubled and airy. Punch down gently, roll into a rectangle half an inch thick, and cut into classic long john rectangles roughly three by five inches.
- 4Place the cut pieces on parchment, cover loosely, and proof a second time until puffy. While they rise, whip the heavy cream with powdered sugar, cocoa, and vanilla to stiff peaks for the chocolate cream filling, then chill.
- 5Heat oil in a deep pot to 350°F. Fry the long johns two or three at a time, flipping carefully, until the chocolate dough is deep mahogany and crisp on the outside yet still light inside. Drain thoroughly on a rack.
- 6Allow the fried long johns to cool completely so the cream will not melt. Using a long thin tip or a knife, create a tunnel down the length of each pastry from one short end.
- 7Pipe the chilled chocolate whipped cream generously into the cavity until the long john feels fully filled and slightly rounded. Wipe any excess from the ends for a clean bakery look.
- 8For the glaze, heat the cream until just simmering, pour over the chocolate chips, let sit one minute, then stir until smooth and glossy. Dip or spoon the warm chocolate glaze over the top of each filled long john.
