Ingredients

  • 12 oz bittersweet chocolate (60–70% cacao), chopped
  • 2 tbsp coconut oil
  • 3/4 cup natural almond butter, well stirred
  • 3 tbsp powdered sugar
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp fine sea salt
  • 1/2 cup roasted almonds, finely chopped
  • 1/4 cup sliced almonds
  • 1 tbsp toasted sesame seeds
  • 1/2 tsp flaky sea salt

Instructions

  1. 1Line a 12-cup muffin tin with paper liners and clear space in the refrigerator for chilling.
  2. 2Melt the bittersweet chocolate with the coconut oil in a heatproof bowl set over barely simmering water, stirring until completely smooth and glossy; remove from heat.
  3. 3Spoon a thin layer of melted chocolate into the bottom of each liner, tilting to coat the base and a little up the sides; chill 10 minutes until firm.
  4. 4In a small bowl, mix the almond butter with powdered sugar, vanilla, and fine sea salt until thick and spreadable.
  5. 5Fold the finely chopped roasted almonds into the almond butter mixture so the filling is packed with visible almond pieces.
  6. 6Divide the almond butter filling among the cups, pressing gently into an even layer that does not reach the rim, leaving a border of chocolate the edge.
  7. 7Spoon the remaining melted chocolate over each filling to fully cover, tapping the tin lightly so the tops level and any air bubbles rise.
  8. 8Immediately top each cup with sliced almonds and toasted sesame seeds, pressing lightly so they stick, then finish with flaky sea salt.
  9. 9Refrigerate at least 45 minutes, or until the chocolate shells are fully set and snap cleanly.
  10. 10Peel away the liners and serve cold or cool so the bittersweet shell, almond-butter center, and crunchy almond topping all read clearly in every bite.
