Brandied Peach Ice Cream Parfaits

Parfait means “perfect” in French, and this American sundae-style stack leans into that promise with brandied peaches and their syrup. Soft whipped cream, vanilla ice cream, and a crunch of shortbread or toasted almonds keep every chilled layer bright and playful.

Ingredients

  • 2 cups brandied peaches with syrup
  • 1 pint vanilla ice cream
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup crushed shortbread cookies or graham crackers
  • 1/4 cup toasted sliced almonds
  • for garnish fresh mint leaves

Instructions

  1. 1Chill four tall parfait or sundae glasses in the freezer for at least 10 minutes so the layers stay cold and distinct.
  2. 2In a medium bowl whip the heavy cream with powdered sugar and vanilla extract until soft peaks form; keep the whipped cream chilled until assembly.
  3. 3Gently warm the brandied peaches and their syrup in a small saucepan over low heat just until the fruit is fragrant and the syrup loosens, about 3 minutes; do not boil. Remove from heat and let cool slightly so it does not melt the ice cream instantly.
  4. 4Spoon a layer of crushed shortbread or graham crackers into the bottom of each chilled glass to create a crunchy base.
  5. 5Add a scoop of vanilla ice cream on top of the crumbs, pressing lightly so it sits evenly.
  6. 6Spoon a generous portion of the warm brandied peaches and syrup over the ice cream so the fruit cascades down the sides.
  7. 7Add another thin layer of cookie crumbs, then a dollop of whipped cream. Repeat the ice-cream and brandied-peach layers once more if glass height allows.
  8. 8Finish each parfait with a final swirl of whipped cream, a sprinkle of toasted almonds, a few extra brandied peach pieces, and a mint leaf.
  9. 9Serve immediately while the contrast of cold ice cream, warm boozy fruit, and crunchy layers is at its peak. Provide long spoons so every layer can be enjoyed together.
