  • 2 1/2 lb tart-sweet apples (Granny Smith or Honeycrisp mix)
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 8 tbsp unsalted butter, cold and cubed
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1 tbsp fresh lemon juice
  • 1/2 tsp kosher salt
  • 1 tsp vanilla extract

Instructions

  1. 1Preheat the oven to 375°F. Lightly butter a 9-inch square or 2-quart baking dish so the fruit juices do not stick.
  2. 2Peel, core, and slice the apples into generous 1/2-inch wedges. Toss them in a large bowl with the lemon juice, half the cinnamon, the granulated sugar, and the vanilla until evenly coated.
  3. 3Spread the seasoned apple slices in an even layer in the prepared baking dish; they should mound slightly because they will cook down.
  4. 4In another bowl combine the oats, flour, brown sugar, remaining cinnamon, cardamom, and salt. Add the cold butter cubes.
  5. 5Using your fingertips or a pastry blender, work the butter into the dry mixture until it forms irregular clumps the size of peas and the oats are evenly distributed.
  6. 6Scatter the oat topping generously and evenly over the apples, covering the fruit completely but leaving a few gaps so steam can escape.
  7. 7Bake for 40 to 45 minutes until the topping is deep golden brown and crisp, the apples are bubbling vigorously the edges, and a knife slides easily into the fruit.
  8. 8Remove from the oven and let the crisp rest on a wire rack for 10 to 15 minutes so the juices thicken into a light syrup.
