Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 cup fresh pumpkin puree
  • 1 1/4 cups buttermilk
  • 2 large eggs
  • 3 tbsp brown sugar
  • 3 tbsp melted butter
  • 1 tsp vanilla extract
  • 2 tbsp butter or oil for the griddle
  • 1/2 cup maple syrup for serving
  • 1/4 cup toasted pepitas
  • 1 small thinly sliced apple

Instructions

  1. 1In a medium bowl whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt until evenly combined.
  2. 2In a separate larger bowl whisk the fresh pumpkin puree, buttermilk, eggs, brown sugar, melted butter, and vanilla until smooth and glossy.
  3. 3Pour the dry ingredients into the wet mixture and fold gently with a spatula just until no large flour streaks remain; a few small lumps are fine and keep the pancakes tender.
  4. 4Rest the batter for 5 minutes while you heat a griddle or large nonstick skillet over medium heat to about 350°F.
  5. 5Lightly grease the hot surface with butter or oil; it should sizzle softly when a drop of water hits.
  6. 6Scoop batter per pancake onto the griddle, leaving space between each so they can spread.
  7. 7Cook until bubbles form across the surface and the edges look set and slightly dry, about 2 to 3 minutes.
  8. 8Flip carefully and cook the second side 1 1/2 to 2 minutes more until golden brown and cooked through.
  9. 9Transfer finished pancakes to a warm plate and repeat with remaining batter, greasing the pan as needed.
  10. 10Stack three pancakes per serving, top with thinly sliced apple and toasted pepitas, and drizzle generously with warm maple syrup.
  11. 11Serve immediately while the pancakes are still fluffy and fragrant with spice.
