Ingredients
- 1 cup old-fashioned rolled oats
- 2 cups whole milk or unsweetened almond milk
- 1/2 cup water
- 2 medium firm apples
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 1/8 tsp pinch of kosher salt
- 1/4 cup chopped walnuts or pecans
- 1 tsp fresh lemon juice
- 1 tsp unsalted butter
Instructions
- 1Dice one apple into small cubes and thinly slice the second apple into half-moons for topping later.
- 2In a medium saucepan over medium heat, melt the butter until it foams lightly.
- 3Add the diced apple and cook 2 to 3 minutes, stirring, until the pieces just begin to soften and smell sweet.
- 4Pour in the oats, milk, water, cinnamon, nutmeg, ginger, and salt; stir to combine everything evenly.
- 5Bring the mixture to a gentle simmer, then reduce heat to medium-low so it bubbles softly without scorching.
- 6Cook 5 to 7 minutes, stirring often, until the oats thicken and turn creamy while the apple pieces stay tender.
- 7Stir in the vanilla extract and maple syrup, tasting and adjusting sweetness if needed.
- 8Remove from heat and let the oatmeal rest 1 minute so it thickens further and the spices bloom.
- 9Meanwhile, quickly toss the reserved apple slices with lemon juice to keep them bright and prevent browning.
- 10Ladle the warm oatmeal into bowls, top with the fresh apple slices and chopped nuts, and serve immediately while steaming.
