- 1/2 tsp kosher salt
- 1 1/2 tsp vanilla extract
- 1/2 cup chopped walnuts
- 1/3 cup raisins
- 1 cup Greek yogurt
- 2 tbsp fresh mint leaves
Instructions
- 1Preheat the oven to 375°F and lightly butter an 8-by-8-inch or similar mid-size baking dish.
- 2Core the apples and cut them into half-inch cubes, leaving the peels on for color and texture.
- 3In a large mixing bowl stir together the oats, baking powder, cinnamon, ginger, cardamom, and salt until the spices coat every flake.
- 4In another bowl whisk the milk, eggs, maple syrup, melted butter, and vanilla until smooth and fully emulsified.
- 5Pour the wet mixture over the oats and fold until every oat is moistened. Gently stir in most of the apple cubes, the walnuts, and the raisins, reserving apple pieces for the top.
- 6Scrape the batter into the prepared dish and spread it into an even layer. Press the reserved apple cubes across the surface so they roast and caramelize while baking.
- 7Bake 35 to 40 minutes until the edges pull slightly from the pan, the center is set and no longer jiggly, and the top apples look golden and glossy.
