- 1 1/2 cups buttermilk
- 2 large eggs
- 3 tbsp melted unsalted butter, plus more for the pan
- 2 tbsp pure maple syrup, plus more for serving
- 2 medium crisp apples, peeled and finely diced
- 1 tsp fresh lemon juice
- 1/3 cup toasted walnuts, roughly chopped

Instructions
- 1In a large bowl whisk together the buckwheat flour, all-purpose flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt until evenly combined.
- 2In a separate bowl beat the buttermilk, eggs, melted butter, and maple syrup until smooth.
- 3Pour the wet ingredients into the dry and stir just until a thick batter forms; a few small lumps are fine—do not overmix.
- 4Toss the finely diced apples with the lemon juice, then fold most of them into the batter, reserving a handful for garnish.
- 5Heat a large nonstick skillet or griddle over medium heat (about 350°F surface temperature) and brush lightly with butter.
- 6Scoop batter per pancake onto the hot surface, spacing them apart; cook 2–3 minutes until bubbles form on top and the edges look set and lightly golden.
- 7Flip carefully and cook another 1 1/2–2 minutes until the undersides are deep golden and the centers spring back when lightly pressed.
- 8Transfer finished pancakes to a warm plate and tent loosely with foil while you cook the remaining batter, buttering the pan between batches.
