Ingredients
- 4 thick sourdough bread slices
- 3 tbsp extra-virgin olive oil
- 12 oz mixed mushrooms (cremini and oyster)
- 1 shallot
- 1 garlic clove
- 1 firm apple
- 2 tbsp chopped fresh tarragon or parsley
- 2 tsp sherry vinegar or apple cider vinegar
- 2 tbsp unsalted butter
- 4 large eggs
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- for finishing flaky sea salt
Instructions
- 1Heat a large skillet over medium-high and add most of the olive oil. Tear or thickly slice the mushrooms so they keep meaty texture.
- 2Add mushrooms to the hot oil in a single layer; cook undisturbed 4 minutes until deeply browned on one side, then stir and continue 3–4 minutes more until golden all over.
- 3Finely mince the shallot and garlic; core and cut the apple into thin matchsticks. Push mushrooms to the side, add shallot and garlic, and cook 1 minute until fragrant.
- 4Stir in the apple matchsticks, chopped herbs, vinegar, half the salt, and pepper. Toss 1–2 minutes just until the apple softens slightly and everything is glossy; keep warm over low heat.
- 5Toast the sourdough slices in a toaster or under the broiler until crisp and golden on both sides; brush lightly with the remaining olive oil.
- 6In a nonstick skillet, melt the butter over medium heat until foaming. Crack in the eggs and fry 2–3 minutes for set whites and runny yolks, seasoning with remaining salt and pepper.
- 7Spoon the warm mushroom-apple mixture generously over each toast, mounding it so some apples stay bright and crunchy.
- 8Top each toast with a fried egg, finish with flaky sea salt and extra herbs, and serve immediately so the yolk can run into the mushrooms.
