Ingredients
- 14 oz mixed fresh mushrooms (shiitake, cremini, beech)
- 4 large eggs
- 5 cups baby kale or mixed breakfast greens
- 1 crisp apple, matchstick-cut
- 1 avocado, sliced
- 1/4 cup toasted pumpkin seeds
- 4 Tbsp extra-virgin olive oil
- 1 tsp Dijon mustard
- 2 Tbsp apple cider vinegar
- 1 tsp honey
- 1 garlic clove, grated
- 2 Tbsp fresh dill, chopped
- 1 Tbsp fresh tarragon or parsley
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup crumbled soft goat cheese
Instructions
- 1Whisk together most of the olive oil with the Dijon, apple cider vinegar, honey, grated garlic, salt, and pepper until the dressing emulsifies and looks glossy. Taste and adjust brightness if needed.
- 2Wipe and trim the mushrooms. Slice shiitake and cremini; keep beech clusters intact for visual interest so the warm salad looks abundant on a platter.
- 3Heat the remaining olive oil in a wide skillet over medium-high heat. Add the mushrooms and cook, stirring only occasionally, until deeply browned and tender with crispy edges, 8 to 10 minutes. Season with salt, pepper, and half the fresh herbs while still hot.
- 4Bring a medium saucepan of water to a gentle simmer for poaching. Crack each egg into a small cup. Swirl the water, slip the eggs in one at a time, and poach until whites are set and yolks remain jammy, 3 to 4 minutes. Lift out with a slotted spoon onto a paper towel.
- 5Place the baby kale or mixed greens in a large bowl. Spoon a little dressing over them and toss with clean hands until every leaf is lightly coated and just starting to soften.
- 6Add the warm mushrooms to the greens so residual heat wilts them slightly without fully collapsing the salad. Fold in the apple matchsticks and most of the remaining herbs.
- 7Transfer the warm salad to a wide shareable platter. Nestle the avocado slices and jammy poached eggs across the top.
- 8Scatter goat cheese and toasted pumpkin seeds over everything. Drizzle the remaining dressing the platter, finish with black pepper and the last herbs, and serve family-style while the mushrooms and eggs are still warm.
