Ingredients

  • 5 large eggs
  • 2 medium late tomatoes
  • 1 medium crisp apple
  • 3 tbsp chopped fresh chives
  • 1/4 cup torn fresh basil leaves
  • 1 tbsp chopped fresh tarragon
  • 1 1/2 tbsp butter
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 oz goat cheese optional

Instructions

  1. 1Dice the tomatoes into small pieces and place them in a colander; sprinkle lightly with salt and let drain while you prep the rest so excess liquid does not water down the omelette.
  2. 2Core the apple and cut into thin matchsticks or very small dice; keep the skin on for color and fiber. Chop the chives, tear the basil, and chop the tarragon.
  3. 3Crack the eggs into a bowl, add the remaining salt and pepper, and beat vigorously with a fork until the whites and yolks are fully blended and slightly frothy. Stir in half the mixed herbs.
  4. 4Heat a 10-inch nonstick skillet over medium heat. Add half the butter and the olive oil and swirl until the foam subsides.
  5. 5Pour in half the egg mixture and let it set for about 20 seconds. Using a spatula, draw the cooked edges toward the center while tilting the pan so uncooked egg flows underneath; repeat until the top is mostly set but still glossy, about 1 1/2 to 2 minutes.
  6. 6Scatter half the drained tomatoes, half the apple, and a little goat cheese if using across one side of the omelette. Sprinkle with more herbs.
  7. 7Fold the empty half over the filling and slide onto a warm plate. Repeat the process with the remaining butter, eggs, and fillings for the second omelette.
  8. 8Garnish both omelettes with the last of the fresh herbs and any remaining apple matchsticks for crunch. Serve at once while the eggs are tender and the tomatoes still bright.
