Ingredients
- 2 cups fresh seedless grapes
- 2 cups ripe cherry or grape tomatoes
- 1 medium English cucumber
- 3/4 cup crumbled feta cheese
- 4 soft-boiled or jammy eggs
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- 1/3 cup fresh basil leaves
- 2 tablespoons fresh mint leaves
- 1/4 cup toasted pine nuts or pumpkin seeds
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 slices crusty bread or toast for serving
Instructions
- 1Bring a small saucepan of water to a gentle boil. Lower the eggs in and cook for exactly 7 minutes for jammy yolks. Transfer immediately to an ice bath and let cool for 3 minutes before peeling.
- 2While the eggs cook, halve the grapes and the cherry tomatoes and place them in a large salad bowl.
- 3Dice the cucumber into small cubes and add them to the bowl with the fruit.
- 4In a small jar or bowl whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper until the dressing emulsifies.
- 5Pour the dressing over the grapes, tomatoes, and cucumber. Toss gently so everything is glossy but not crushed.
- 6Tear the basil and mint leaves and fold most of them into the salad, saving a few pretty leaves for garnish.
- 7Add the crumbled feta and half of the toasted pine nuts or pumpkin seeds; toss once more lightly.
- 8Halve the peeled jammy eggs lengthwise.
- 9Divide the salad among four plates or shallow bowls. Nestle two egg halves on each portion.
- 10Scatter the remaining herbs and seeds over the top. Serve at once with warm crusty bread or toast on the side for scooping. Season with an extra grind of pepper if desired.
