Sweet Potato Sage Frittata

A frittata is Italy’s easygoing open-faced omelet, eggs set on the stove then finished in the oven. Sweet potato half-moons and fragrant sage give this one a cozy, brunch-ready character with a touch of Parmesan.

Ingredients

  • 1 1/2 lb medium sweet potatoes
  • 10 leaves fresh sage leaves
  • 8 large eggs
  • 1/3 cup whole milk
  • 2 tbsp extra-virgin olive oil
  • 1 large shallot
  • 3 cups baby spinach
  • 1/2 cup grated Parmesan cheese
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp fresh thyme leaves

Instructions

  1. 1Preheat the oven to 375°F and position a rack in the center.
  2. 2Peel the sweet potatoes and slice them into thin 1/4-inch half-moons so they cook quickly and evenly.
  3. 3Heat the olive oil in a 10-inch oven-safe nonstick or well-seasoned cast-iron skillet over medium heat.
  4. 4Add the sweet potato slices in a single layer as much as possible and cook, turning occasionally, for 10 to 12 minutes until tender and lightly browned.
  5. 5Thinly slice the shallot and tear the sage leaves; add both to the skillet and cook 2 minutes until the shallot softens and the sage crisps at the edges.
  6. 6Add the baby spinach and toss just until wilted, about 1 minute, then season the vegetables with half the salt and pepper.
  7. 7In a large bowl whisk the eggs, milk, remaining salt and pepper, thyme, and most of the Parmesan until fully combined and slightly frothy.
  8. 8Pour the egg mixture evenly over the vegetables in the skillet, tilting the pan so it settles into every gap.
  9. 9Cook on the stovetop without stirring for 3 to 4 minutes until the edges begin to set.
  10. 10Sprinkle the remaining Parmesan over the top and transfer the skillet to the oven.
  11. 11Bake for 12 to 15 minutes until the center is just set and the top is puffed and lightly golden.
  12. 12Let the frittata rest in the pan for 5 minutes, then slide or invert onto a cutting board, cut into wedges, and serve warm with extra sage leaves if desired.
