
Spiced Pumpkin Yogurt Parfaits

Ingredients
- 1 cup pure pumpkin puree
- 3 cups plain Greek yogurt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cardamom
- 1 tsp vanilla extract
- 3 tbsp honey
- 1 cup granola
- 1/4 cup toasted pepitas
- 8 fresh mint leaves
- 1 tsp lemon zest
- 1 pinch pinch of kosher salt
Instructions
- 1In a medium bowl, whisk the pumpkin puree with cinnamon, ginger, cardamom, half the honey, vanilla, and salt until completely smooth and fragrant.
- 2In a separate bowl, stir the Greek yogurt with the remaining honey and lemon zest until lightly sweetened and creamy. Taste and add a touch more honey only if needed for balance.
- 3Choose four clear glasses or jars. Spoon a layer of the spiced pumpkin mixture into the bottom of each, per glass.
- 4Add a generous spoonful of the honeyed yogurt on top of the pumpkin layer, then sprinkle a thin layer of granola for crunch.
- 5Repeat the layers once more—pumpkin, yogurt, granola—finishing with a final dollop of yogurt on top so the colors show through the glass.
- 6Scatter toasted pepitas over each parfait and tuck in a couple of fresh mint leaves for a bright herbal finish.
- 7Chill the assembled parfaits in the refrigerator for at least 15 minutes (or up to overnight covered) so the flavors meld and the granola softens slightly at the edges.
- 8Serve cold with a long spoon, encouraging diners to dig through all the layers for the full mix of creamy, spiced, and crunchy textures.
