Ingredients
- 1 1/2 cups old-fashioned rolled oats
- 3/4 cup all-purpose flour
- 2 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/2 tsp fine salt
- 2 large eggs
- 1 1/4 cups whole milk
- 3 tbsp maple syrup
- 3 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 2 medium crisp apples, grated
- as needed neutral oil or butter for griddle
- as needed extra maple syrup and apple slices for serving
Instructions
- 1Pulse the rolled oats in a blender or food processor until they resemble a coarse flour with a few larger bits remaining for texture.
- 2In a large bowl whisk the oat flour with the all-purpose flour, baking powder, cinnamon, nutmeg, ginger, and salt until evenly combined.
- 3In a separate bowl beat the eggs, then whisk in the milk, maple syrup, melted butter, and vanilla until smooth.
- 4Pour the wet mixture into the dry ingredients and stir gently just until no dry pockets remain; the batter will be thick.
- 5Fold in the grated apple, including any juices, until distributed; let the batter rest 5 minutes so the oats hydrate.
- 6Heat a large nonstick griddle or skillet over medium heat (about 350°F surface temperature) and lightly grease with oil or butter.
- 7Scoop batter per pancake onto the hot surface, spacing them apart; cook until bubbles form on top and the edges look set and golden, 2 to 3 minutes.
- 8Flip carefully and cook the second side until deep golden and cooked through, another 1 1/2 to 2 minutes.
- 9Transfer finished pancakes to a warm plate and repeat with remaining batter, greasing the pan as needed.
- 10Serve stacked with a drizzle of maple syrup and a few fresh apple slices on the side while still hot.
