Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup rolled oats
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 2 large eggs
  • 3/4 cup buttermilk
  • 1/3 cup maple syrup
  • 1/3 cup neutral oil or melted butter
  • 1 tsp vanilla extract
  • 1 large firm apple
  • 4 oz cremini mushrooms
  • 1 tsp fresh thyme leaves
  • 1 tbsp unsalted butter for sautéing
  • 1 tbsp turbinado sugar

Instructions

  1. 1Preheat the oven to 375°F. Line a 6-cup jumbo muffin tin or a standard 12-cup tin (filling only 6–8 wells generously) with paper liners or grease well.
  2. 2Finely dice the mushrooms. Melt the butter in a small skillet over medium heat, add mushrooms and salt, and sauté 4–5 minutes until dry and lightly golden; stir in thyme and cool slightly.
  3. 3Core and finely dice the apple (leave the peel on). In a large bowl whisk flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. 4In another bowl whisk eggs, buttermilk, maple syrup, oil, and vanilla until smooth. Fold the wet mixture into the dry ingredients just until no dry streaks remain.
  5. 5Gently fold in the diced apple and cooled sautéed mushrooms so they are evenly distributed without overmixing.
  6. 6Divide the batter among the prepared muffin cups, filling each nearly to the top. Sprinkle the tops with turbinado sugar for crunch.
  7. 7Bake 22–26 minutes until the muffins are deeply golden, spring back when lightly pressed, and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. 8Cool in the pan 5 minutes, then transfer to a rack. Serve warm or at room temperature—ideal for a weekend potluck spread or grab-and-go brunch basket.
