Ingredients
- 2 slices thick-sliced sourdough bread
- 1 large red bell pepper
- 1 medium yellow bell pepper
- 2 ripe avocados
- 2 tbsp olive oil
- 1 garlic clove
- 1 tbsp lemon juice
- 1/2 tsp smoked paprika
- 1/4 tsp red pepper flakes
- 1/2 tsp kosher salt
- 1/8 tsp black pepper
- 2 optional soft-boiled or fried eggs
- for garnish fresh basil or microgreens
- 1 tsp optional everything bagel seasoning
Instructions
- 1Preheat the oven to 425°F. Halve and seed the red and yellow bell peppers, then cut them into flat panels so they roast evenly.
- 2Toss the pepper pieces with half of the olive oil and salt. Arrange skin-side up on a small sheet pan and roast until the skins blister and char in spots and the flesh is soft and sweet, 18 to 22 minutes.
- 3Transfer the hot peppers to a bowl and cover with a plate for 5 minutes to steam. Peel away the loosened skins, then slice the roasted flesh into thick strips. Toss the strips with a drizzle of olive oil and smoked paprika.
- 4Toast the sourdough until deep golden and crisp on the outside but still chewy inside, either in a toaster or in a dry skillet over medium heat, about 2 minutes per side.
- 5While the bread toasts, halve the avocados, remove the pits, and scoop the flesh into a bowl. Add lemon juice, the remaining salt, black pepper, and a light pinch of red pepper flakes. Mash with a fork until creamy but still a little chunky.
- 6Rub the hot toast lightly with the cut side of the garlic clove for aroma. Drizzle each slice with a little olive oil.
- 7Spread the mashed avocado thickly over each toast. Pile the warm roasted pepper strips on top so they are the clear star, folding some pieces for height and color contrast.
- 8Finish with more smoked paprika, optional everything bagel seasoning, torn basil or microgreens, and a soft-boiled or fried egg if you want extra protein. Serve immediately while the toast is crisp and the peppers are still warm.
