
Pumpkin Spice Oatmeal

- 2 cups old-fashioned rolled oats
- 3 cups water
- 1 cup whole milk

- 1 medium apple fresh apple slices
- 1 tablespoon butter
Instructions
- 1In a medium saucepan over medium heat, melt the butter until it foams gently and smells nutty.
- 2Add the oats and toast them for about 2 minutes, stirring constantly until they smell fragrant and turn a shade deeper.
- 3Pour in the water and milk, then stir in the pumpkin puree, maple syrup, pumpkin pie spice, cinnamon, vanilla, and salt until fully combined and smooth.
- 4Bring the mixture to a gentle simmer, then reduce the heat to medium-low.
- 5Cook uncovered for 8 to 10 minutes, stirring often so the bottom does not scorch, until the oats are creamy and thickened to a porridge consistency.
- 6Taste and adjust warmth of the spices if needed, then remove from heat and let the oatmeal rest 1 minute to finish absorbing liquid.
- 7While it rests, thinly slice the fresh apple into half-moons for a crisp contrast.
