
Peach & Pepper Breakfast Salad

Ingredients
- 3 medium ripe peaches
- 4 mini sweet peppers
- 1 large ripe avocado
- 1/2 cup loosely packed fresh basil leaves
- 4 cups baby arugula
- 4 soft-boiled eggs
- 3 tbsp extra-virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp honey
- 1 tsp Dijon mustard
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1/4 cup toasted pepitas
- 1/3 cup crumbled goat cheese
Instructions
- 1Bring a small saucepan of water to a gentle boil. Carefully lower in the eggs and cook exactly 7 minutes for jammy yolks. Transfer immediately to an ice bath for 3 minutes, then peel and set aside.
- 2While the eggs cook, rinse the peaches, peppers, and arugula. Pat everything dry so the dressing clings properly.
- 3Halve and pit the peaches, then cut into thin wedges. Slice the mini peppers into thin rings, discarding stems and any seeds.
- 4Halve the avocado, remove the pit, and slice the flesh into neat half-moons. Tear the basil leaves into rough pieces.
- 5In a small jar or bowl, whisk the olive oil, lemon juice, honey, Dijon, salt, and pepper until the dressing looks emulsified and slightly thickened.
- 6In a large wide bowl, toss the arugula with two-thirds of the dressing so every leaf is lightly coated but not soggy.
- 7Arrange the dressed arugula on four plates or shallow bowls. Artfully scatter the peach wedges, pepper rings, and avocado slices over the greens.
- 8Halve each soft-boiled egg and nestle two halves onto each plate so the jammy yolk is visible.
- 9Drizzle the remaining dressing over the fruit and eggs. Sprinkle with goat cheese, pepitas, and torn basil.
- 10Finish with a final crack of black pepper. Serve right away while the eggs are still slightly warm and the peaches are cool and juicy.
