- 1 3/4 cups all-purpose flour
- 1/4 cup cornstarch
- 3 tbsp granulated sugar
- 1 tbsp baking powder
- 1/2 tsp kosher salt
- 1 1/2 cups whole milk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 3 ripe peaches, thinly sliced
- 1 1/2 cups fresh raspberries
- 1/3 cup raspberry jam
- 2 tbsp water
- 1 cup vanilla Greek yogurt
- 1/4 cup sliced almonds, toasted
- 2 tbsp powdered sugar, for dusting

Instructions
- 1Preheat a waffle iron to medium-high until fully heated. In a large bowl whisk the flour, cornstarch, sugar, baking powder, and salt. In another bowl whisk the milk, eggs, melted butter, and vanilla until smooth.
- 2Pour the wet mixture into the dry and fold gently until just combined with a few small lumps remaining. Rest the batter 5 minutes so the leaveners activate and the texture lightens.
- 3While the batter rests, warm the raspberry jam with the water in a small saucepan over medium-low heat, stirring until loose and glossy, about 2 minutes. Remove from heat and fold in half the fresh raspberries to make a quick Melba-style sauce; set aside.
- 4Lightly spray the waffle iron. Portion batter onto the hot plates, close, and cook until deep golden and crisp, 4 to 6 minutes. Transfer finished waffles to a wire rack so they stay crunchy.
- 5Repeat until all batter is used, keeping cooked waffles warm in a 200°F oven on the rack if needed. Slice the peaches into thin half-moons while the last batch cooks.
- 6To build each stack, place one hot waffle on a plate, spoon a swirl of vanilla Greek yogurt over it, then layer peach slices and a spoonful of the warm raspberry sauce.
- 7Add a second waffle on top if desired for height, more yogurt, remaining peaches, sauce, and the rest of the fresh raspberries.
- 8Finish with a dusting of powdered sugar and a sprinkle of toasted sliced almonds. Serve at once so the waffles stay crisp against the juicy fruit and cool yogurt.
