Mushroom & Apple Scramble

American breakfast scrambles often welcome whatever the garden and orchard offer side by side. This one pairs meaty cremini mushrooms with crisp apple, thyme, and a whisper of nutmeg for a sweet-savory skillet that feels both familiar and fresh.

Ingredients

  • 8 large eggs
  • 12 oz cremini mushrooms
  • 1 medium crisp apple (Honeycrisp or Gala)
  • 1 small shallot
  • 2 tsp fresh thyme leaves
  • 2 tbsp chopped fresh parsley
  • 2 tbsp olive oil
  • 1 tsp unsalted butter
  • 1/8 tsp ground nutmeg
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp apple cider vinegar

Instructions

  1. 1Wipe the mushrooms clean with a damp towel and slice them thin so they cook evenly and keep a meaty bite. Core the apple and cut it into small dice; mince the shallot.
  2. 2Heat a 12-inch nonstick skillet over medium heat and add the olive oil. When the oil shimmers, add the shallot and cook 1 minute until fragrant and translucent.
  3. 3Add the sliced mushrooms in a single layer as much as possible. Let them sit undisturbed 2 to 3 minutes so the edges turn golden, then stir and cook another 3 to 4 minutes until they release liquid and it mostly evaporates.
  4. 4Stir in the diced apple, thyme, nutmeg, half the salt, and pepper. Cook 2 minutes more until the apple softens slightly but still holds shape and smells sweet-earthy. Splash in the vinegar and scrape up any browned bits.
  5. 5In a bowl, crack the eggs and beat them lightly with the remaining salt and pepper until just combined—no froth needed.
  6. 6Push the mushroom-apple mixture to one side of the pan. Add the tiny bit of butter to the empty side, then pour in the eggs.
  7. 7Lower heat to medium-low. Gently fold the eggs with a spatula, pulling cooked edges toward the center and letting uncooked egg flow underneath, for 2 to 3 minutes until soft curds form but the eggs still look slightly glossy.
  8. 8Fold the mushroom-apple mixture through the eggs so everything is evenly distributed. Remove from heat while the scramble is still creamy.
  9. 9Taste and adjust seasoning. Scatter the chopped parsley over the top and serve immediately on warm plates.
