Ingredients
- 4 large eggs
- 1 cup whole milk
- 1 cup all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp kosher salt
- 4 tbsp unsalted butter
- 8 oz cremini mushrooms
- 1 large firm apple (Honeycrisp or Granny Smith)
- 1 tsp fresh thyme leaves
- 1 tsp apple cider vinegar
- 1/4 tsp black pepper
- 1 tbsp powdered sugar
- for serving maple syrup
Instructions
- 1Preheat the oven to 425°F and place a 10-inch cast-iron skillet on the middle rack so it heats thoroughly for at least 10 minutes.
- 2While the skillet heats, whisk the eggs in a blender or large bowl until frothy, then blend in the milk, flour, sugar, vanilla, and salt until the batter is completely smooth and pourable; let it rest 5 minutes.
- 3Wipe and thinly slice the mushrooms; core and thinly slice the apple into half-moons, keeping the peels on for color and texture.
- 4Carefully remove the hot skillet, add half the butter, and swirl until melted and foaming. Immediately pour in the rested batter and return the skillet to the oven.
- 5Bake 18–22 minutes until the Dutch baby is dramatically puffed, deep golden at the edges, and set in the center with a custardy middle.
- 6Meanwhile, melt the remaining butter in a large skillet over medium heat. Add the mushrooms in a single layer and cook undisturbed 3–4 minutes until they release moisture and begin to brown.
- 7Stir in the apple slices, thyme, vinegar, and pepper; sauté 3–4 minutes more until the apples soften slightly but still hold their shape and the mushrooms are golden and fragrant.
- 8Remove the Dutch baby from the oven—it will deflate slightly—and immediately spoon the warm mushroom-apple mixture over the center.
- 9Dust lightly with powdered sugar, cut into four wedges at the table, and pass maple syrup so everyone can drizzle to taste. Serve right away while the edges are still crisp.
