Ingredients

  • 2 large slices thick-cut brioche or soft white bread
  • 2 tbsp unsalted butter, softened
  • 3 tbsp honey
  • 1/4 tsp ground cinnamon
  • 1 ripe banana, sliced
  • 1/2 cup fresh blackberries
  • 1/4 cup toasted walnuts, roughly chopped
  • 1/2 cup plain whole-milk yogurt
  • 6 fresh mint leaves
  • 1 pinch pinch of flaky sea salt

Instructions

  1. 1Preheat the oven to three hundred seventy-five degrees Fahrenheit and line a small baking sheet with parchment so cleanup stays simple.
  2. 2Spread both sides of each thick bread slice generously with softened butter, pressing gently so the butter clings in an even golden coat.
  3. 3Place the buttered slices on the prepared sheet and bake for eight to ten minutes, flipping once halfway, until both faces are deep golden and the edges crisp while the centers stay pillowy.
  4. 4While the toast bakes, warm the honey with the cinnamon in a tiny saucepan over the lowest heat for one minute until fragrant and pourable, then take it off the heat.
  5. 5Stir the yogurt briefly so it looks silky and spoon it into a small bowl ready for dolloping.
  6. 6When the toast emerges hot and fragrant, transfer each slice to a rustic plate or wooden board and immediately drizzle with most of the warm cinnamon honey so it soaks into the soft crumb.
  7. 7Arrange banana slices in gentle overlapping rows across the toast, then nestle blackberries into the gaps so the colors look like a little hillside garden.
  8. 8Scatter the toasted walnuts over the fruit, add generous spoonfuls of yogurt beside or on top, and finish with the remaining honey drizzle, mint leaves, and a tiny pinch of flaky salt.
  9. 9Serve right away while the toast is still crackling at the edges and the honey is warm, the kind of simple treat a young witch might pack for a breezy delivery morning.
