  • 1 1/2 cups red seedless grapes
  • 1 large Gala apples
  • 2 cups plain Greek yogurt
  • 2 tbsp honey
  • 1 tsp lemon zest
  • 1 tsp fresh lemon juice
  • 1/2 cup granola
  • 1 tbsp chia seeds
  • 2 tbsp toasted sliced almonds
  • 8 leaves fresh mint leaves
  • 1/4 tsp ground cinnamon

Instructions

  1. 1Rinse the grapes and halve them so their juices mingle with the other layers. Pat dry gently so the parfait does not turn watery.
  2. 2Core the apple and cut it into small dice. Toss the apple pieces immediately with lemon juice and cinnamon to keep them bright and prevent browning.
  3. 3In a small bowl, stir the Greek yogurt with honey and lemon zest until smooth and lightly sweetened. Taste and add a touch more honey if you prefer it sweeter.
  4. 4Choose two clear glasses or jars so the colorful layers show. Spoon a base of yogurt into each vessel.
  5. 5Add a layer of halved grapes, then a sprinkle of chia seeds and a spoonful of diced apple. Press lightly so the fruit settles into the yogurt.
  6. 6Repeat with another yogurt layer, more grapes and apple, and a generous handful of granola for crunch.
  7. 7Finish with a final dollop of yogurt, the remaining fruit, toasted almonds, and torn mint leaves on top.
  8. 8Chill for 10 minutes if you have time so the chia softens slightly and the flavors marry, or serve right away for maximum granola crunch.
