Ingredients

  • 1 cup fresh cranberries
  • 1 large navel orange
  • 1 teaspoon orange zest
  • 2 tablespoons granulated sugar
  • 3 cups plain Greek yogurt
  • 2 tablespoons honey
  • 1 cup granola
  • 1/4 cup chopped walnuts
  • 1/4 teaspoon ground cinnamon
  • optional garnish fresh mint leaves

Instructions

  1. 1Rinse the cranberries and place them in a small bowl. Finely zest the orange, then supreme or segment the fruit, catching the juice in the same bowl.
  2. 2Add the sugar, orange zest, and cinnamon to the cranberries and orange segments. Gently mash a few berries with a fork so they release juice and form a bright raw relish.
  3. 3Let the cranberry-orange mixture sit at room temperature for 8 to 10 minutes so the sugar dissolves and the flavors brighten without cooking.
  4. 4In a separate bowl, stir the Greek yogurt with the honey until smooth and lightly sweetened.
  5. 5Spoon a layer of the honeyed yogurt into the bottom of four glasses or jars.
  6. 6Add a spoonful of the raw cranberry-orange relish over the yogurt, followed by a sprinkle of granola and chopped walnuts.
  7. 7Repeat the layers once more, finishing with a final dollop of yogurt and a few whole cranberries on top for color.
  8. 8Chill the assembled parfaits for at least 10 minutes if time allows so the granola softens slightly at the edges while staying crunchy in the center.
  9. 9Just before serving, garnish with a tiny mint leaf if desired.
  10. 10Eat with a long spoon to hit every layer, or seal the jars for grab-and-go weekday breakfasts.
