Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 2/3 cups whole milk
  • 1/3 cup melted butter
  • 1 tsp vanilla extract
  • 4 medium ripe peaches
  • 1/2 cup rolled oats
  • 1/3 cup chopped pecans
  • 3 tbsp cold butter
  • 1/4 cup maple syrup
  • 1/8 tsp ground nutmeg
  • as needed nonstick cooking spray

Instructions

  1. 1Preheat the waffle iron to medium-high, about 375°F, and spray the grids so the cinnamon batter releases easily.
  2. 2In a large bowl whisk flour, baking powder, cinnamon, salt, and brown sugar until the spice is evenly flecked through the dry mix.
  3. 3Whisk eggs, milk, melted butter, and vanilla in a separate bowl until the liquid looks smooth and lightly frothy.
  4. 4Pour wet into dry and fold just until a thick batter comes together; avoid overmixing so the waffles stay fluffy inside.
  5. 5Pit and slice the peaches into thin wedges. Toss half of them in a skillet with a splash of maple syrup and nutmeg over medium heat for 3–4 minutes until glossy and just softened.
  6. 6For the crisp topping, rub the cold butter into the oats, pecans, a spoonful of brown sugar from the batter bowl if needed, and a dusting of cinnamon until crumbly clusters form.
  7. 7Toast the oat-pecan crumble in a dry skillet over medium heat for 3–4 minutes, stirring, until golden and fragrant; set aside.
  8. 8Cook the waffle batter 4–5 minutes per batch until deep golden with crisp edges and a warm cinnamon aroma.
  9. 9Rest waffles briefly on a rack, then plate two per person. Spoon the warm maple peaches over the top and shower generously with the toasted crisp crumble.
  10. 10Drizzle remaining maple syrup over everything and serve hot so the crisp stays crunchy against the soft fruit and fluffy waffle.
