Ingredients

  • 3 cups plain nonfat Greek yogurt
  • 2 large crisp apples
  • 1.5 teaspoons ground cinnamon
  • 3 tablespoons pure maple syrup
  • 1 cup granola
  • 1 tablespoon fresh lemon juice
  • 1/4 cup toasted pumpkin seeds
  • 8 small leaves fresh basil leaves

Instructions

  1. 1Core the apples and cut them into thin matchstick slices or small dice, then toss them immediately with the lemon juice in a bowl to prevent browning.
  2. 2Sprinkle the cinnamon and half of the maple syrup over the apples and toss again until every piece is lightly coated; let the mixture sit for 5 minutes so the apples release a little juice.
  3. 3Spoon a layer of Greek yogurt into the bottom of each of four clear glasses or jars, using one-third of the total yogurt.
  4. 4Add a layer of the cinnamon apples on top of the yogurt in each glass.
  5. 5Sprinkle a portion of the granola over the apple layer for crunch.
  6. 6Repeat the layers once more—yogurt, remaining apples, and remaining granola—finishing with a final dollop of yogurt on top.
  7. 7Drizzle the remaining maple syrup over each parfait.
  8. 8Scatter the toasted pumpkin seeds across the tops for extra protein and texture.
  9. 9Tear the fresh basil leaves into small pieces and tuck a few into each parfait for a surprising herbal brightness that pairs with the sweet apple.
  10. 10Serve immediately for maximum crunch, or cover and refrigerate up to 24 hours; if making ahead, keep the granola in a separate container and add just before eating so it stays crisp.
