Ingredients
- 1 cup old-fashioned rolled oats
- 1 cup unsweetened almond milk or dairy milk
- 1/2 cup plain Greek yogurt
- 1 Tbsp chia seeds
- 2 Tbsp pure maple syrup
- 1 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 1 pinch kosher salt
- 1 medium firm sweet apple
- 1 tsp fresh lemon juice
- 3 Tbsp chopped pecans
- 1/4 tsp extra cinnamon for dusting
Instructions
- 1In a medium bowl whisk together the milk, Greek yogurt, maple syrup, vanilla, cinnamon, and salt until smooth.
- 2Stir in the oats and chia seeds until every flake is coated and no dry pockets remain.
- 3Core the apple and cut half of it into small dice; toss the dice with the lemon juice.
- 4Fold the diced apple into the oat mixture.
- 5Divide the mixture evenly between two jars or containers with lids.
- 6Thinly slice the remaining apple half and lay the raw slices on top of each jar for a fresh finish.
- 7Seal and refrigerate at least 6 hours or overnight so the oats soften and the flavors meld.
- 8In the morning, give each jar a quick stir if you prefer a creamier texture, or leave the layers intact.
- 9Top with the chopped pecans and a light dusting of extra cinnamon.
- 10Eat cold straight from the jar or warm gently in the microwave for 45 to 60 seconds if you want a cozy bowl.
- 11If the oats seem thick after chilling, loosen with a splash of milk before serving.
