Ingredients

  • 8 large eggs
  • 1/4 cup whole milk
  • 8 oz cremini mushrooms
  • 1 medium firm apple (Honeycrisp or Granny Smith)
  • 1 shallot
  • 1 tsp fresh thyme leaves
  • 2 Tbsp fresh parsley, chopped
  • 1/3 cup grated Parmesan
  • 2 Tbsp unsalted butter
  • 1 Tbsp olive oil
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 pinch ground nutmeg

Instructions

  1. 1Preheat the oven to 375°F and position a rack in the center.
  2. 2Wipe the mushrooms clean and slice them thin; core the apple and cut it into thin half-moons; mince the shallot.
  3. 3In a medium bowl whisk the eggs with the milk, salt, pepper, nutmeg, and half the Parmesan until just combined and lightly frothy.
  4. 4Heat an oven-safe 10-inch skillet over medium heat. Add the butter and olive oil.
  5. 5Add the shallot and cook, stirring, until softened and fragrant, about 2 minutes.
  6. 6Add the mushrooms and salt; sauté until they release liquid and turn golden at the edges, 5 to 6 minutes.
  7. 7Tuck the apple slices into the pan and cook just until they soften slightly but still hold shape, about 2 minutes; stir in the thyme.
  8. 8Pour the egg mixture evenly over the vegetables. Let the edges set for 1 to 2 minutes without stirring, then gently pull the cooked edges toward the center once or twice so uncooked egg flows underneath.
  9. 9Sprinkle the remaining Parmesan and the parsley over the top.
  10. 10Transfer the skillet to the oven and bake until the center is just set and the top is lightly golden, 12 to 15 minutes. A knife inserted in the middle should come out clean.
  11. 11Rest the frittata in the pan for 3 minutes so it firms up.
  12. 12Loosen the edges with a spatula, slice into wedges, and serve warm.
