Apple Cinnamon Dutch Baby
A Dutch baby takes its name from Deutsch, nodding to German-American oven pancakes that billow dramatically in a screaming-hot skillet. This breakfast version folds in tart apple slices kissed with cinnamon and brown sugar, then finishes with a snowy dusting of powdered sugar.

Ingredients
- 3 large eggs
- 2/3 cup whole milk
- 2/3 cup all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon fine salt
- 3 tablespoons unsalted butter
- 1 large firm-tart apple (Granny Smith or Pink Lady), thinly sliced
- 2 tablespoons light brown sugar
- 1 teaspoon fresh lemon juice
- 1 tablespoon powdered sugar, for dusting
- 1/4 cup maple syrup, for serving
Instructions
- 1Place a 10-inch cast-iron skillet on the middle rack of the oven and preheat the oven to 425°F. The pan must be screaming hot before the batter goes in.
- 2While the oven heats, whisk the eggs in a blender or large bowl until frothy. Add the milk, flour, granulated sugar, vanilla, half of the cinnamon, and salt. Blend or whisk until completely smooth and lump-free; let the batter rest 5 minutes.
- 3In a small bowl, toss the thin apple slices with the brown sugar, remaining cinnamon, and lemon juice until evenly coated.
- 4Carefully remove the hot skillet from the oven using oven mitts. Add the butter and swirl until melted and foaming, coating the bottom and sides.
- 5Arrange the sugared apple slices in a single layer across the bottom of the buttery skillet; they will begin to sizzle.
- 6Immediately pour the rested batter over the apples. Return the skillet to the oven without delay.
- 7Bake for 18–22 minutes until the Dutch baby is dramatically puffed, deep golden at the edges, and set in the center. Do not open the oven door during the first 15 minutes.
- 8Remove from the oven; the pancake will deflate slightly, which is normal. Dust generously with powdered sugar.
- 9Slice into wedges and serve at once with maple syrup on the side. The caramelized apples at the bottom become the built-in topping.
