Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 3 tbsp lime juice
  • 3 tbsp olive oil
  • 2 tsp chili powder
  • 1.5 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 3 medium bell peppers (mixed colors)
  • 1 large yellow onion
  • 8 (6-inch) flour tortillas
  • 2 tbsp vegetable oil (for cooking)
  • 0.25 cup (chopped) fresh cilantro

Instructions

  1. 1Slice chicken breasts into thin strips (about ½-inch thick).
  2. 2In a large bowl, whisk together lime juice, olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper.
  3. 3Add chicken strips to the marinade, toss to coat, and let sit at room temperature for 15–20 minutes (or refrigerate up to 2 hours).
  4. 4While chicken marinates, slice bell peppers and onion into thin strips; set aside.
  5. 5Warm tortillas in a dry skillet or wrap in foil and place in a 200°F oven; keep warm.
  6. 6Heat vegetable oil in a large cast-iron skillet or heavy pan over medium-high heat until shimmering.
  7. 7Add half the chicken in a single layer; cook 3–4 minutes without stirring until seared, then flip and cook 2–3 more minutes until cooked through (165°F internal). Transfer to a plate and repeat with remaining chicken.
  8. 8Add remaining vegetable oil to the same skillet. Add sliced peppers and onions; season with salt.
  9. 9Cook vegetables 4–6 minutes, stirring occasionally, until softened and lightly charred with some bite remaining.
  10. 10Return chicken to the skillet with vegetables, toss everything together, and cook 1 minute more to combine flavors and reheat.
  11. 11Remove from heat, sprinkle with chopped cilantro.
  12. 12Serve immediately with warm tortillas and optional fixings like sour cream, guacamole, salsa, shredded cheese, and lime wedges.
