Ingredients

  • 8 oz sharp cheddar cheese
  • 4 oz cream cheese
  • 1/2 cup mayonnaise
  • 4 oz diced pimentos
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp cayenne pepper
  • 1/4 tsp salt
  • 8 slices soft white bread

Instructions

  1. 1Grate the sharp cheddar cheese using the large holes of a box grater and set aside.
  2. 2In a medium mixing bowl, beat the cream cheese and mayonnaise together with a wooden spoon or spatula until smooth and creamy.
  3. 3Drain the diced pimentos well, then fold them into the cream cheese mixture.
  4. 4Add the grated cheddar cheese, garlic powder, onion powder, cayenne pepper, and salt. Stir until everything is evenly combined. Taste and adjust seasoning if needed.
  5. 5Cover the bowl and refrigerate the pimento cheese spread for at least 30 minutes to let the flavors meld (or use immediately if short on time).
  6. 6When ready to serve, spread a generous pimento cheese on one slice of soft white bread.
  7. 7Top with a second slice of bread to form a sandwich. Repeat with remaining bread and spread to make 4 sandwiches.
  8. 8For a toasted version, heat a skillet over medium heat, lightly butter the outsides of the sandwiches, and cook 2–3 minutes per side until golden.
  9. 9Cut each sandwich in half diagonally and serve immediately.
