Flautas de Pollo

Flautas take their name from the Spanish word for flutes, thanks to the slender rolled shape that crisps in hot oil. These chicken versions wrap seasoned shredded pollo in warm corn tortillas, then finish with crema, salsa, and crumbled queso.

Ingredients

  • 8 corn tortillas
  • 2 cups shredded cooked chicken breast
  • 1/4 cup chicken broth
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/3 cup vegetable oil
  • 1/2 cup Mexican crema or sour cream
  • 1/2 cup salsa verde or roja
  • 2 cups shredded iceberg lettuce
  • 1/2 cup crumbled queso fresco or cotija
  • 8-16 toothpicks

Instructions

  1. 1Shred the cooked chicken breast into thin strands using two forks.
  2. 2In a small skillet over medium heat, combine the shredded chicken, chicken broth, cumin, garlic powder, and salt. Simmer for 4-5 minutes until the liquid is absorbed and the chicken is well seasoned. Set aside to cool slightly.
  3. 3Warm the corn tortillas in a dry skillet or microwave (wrapped in a damp towel) for 20-30 seconds until pliable so they don't crack when rolling.
  4. 4Place about 3-seasoned chicken filling in a line down the center of each tortilla.
  5. 5Roll each tortilla tightly the filling into a long, thin cylinder. Secure each end with 1-toothpicks to keep them closed.
  6. 6Heat the vegetable oil in a large skillet over medium-high heat until it reaches about 350°F (or a small piece of tortilla sizzles immediately).
  7. 7Working in batches of 3-4, carefully place the rolled flautas seam-side down in the hot oil. Fry for 2-3 minutes per side until golden brown and crispy. Drain on a wire rack or paper towels.
  8. 8Remove the toothpicks once the flautas have cooled slightly.
  9. 9To serve, place 2 flautas on each plate. Drizzle generously with Mexican crema and salsa. Top with shredded lettuce and a sprinkle of crumbled queso fresco.
  10. 10Serve immediately while the flautas are still hot and crispy.
