Caprese takes its name from Capri’s beloved tomato-mozzarella-basil trio, here folded around golden seared chicken in one skillet. Cherry tomatoes, fresh mozzarella, and a quick balsamic finish keep the Italian spirit bright and weeknight-easy.

Ingredients

  • 4 (about 6 oz each) boneless skinless chicken breasts
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 4, minced garlic cloves
  • 2 cups, halved cherry tomatoes
  • 1/4 cup balsamic vinegar
  • 1/3 cup low-sodium chicken broth
  • 8 oz, sliced into 4 portions fresh mozzarella cheese
  • 1/2 cup, torn fresh basil leaves
  • 2 tbsp balsamic glaze
  • 1 tsp Italian seasoning

Instructions

  1. 1Pat the chicken breasts dry with paper towels. Season both sides evenly with kosher salt, black pepper, and Italian seasoning.
  2. 2Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. 3Add the seasoned chicken breasts to the hot skillet. Sear for 4-5 minutes per side until golden brown. Remove chicken to a plate and set aside.
  4. 4Reduce heat to medium. Add minced garlic to the same skillet and sauté for 30-45 seconds until fragrant (do not burn).
  5. 5Add halved cherry tomatoes to the skillet. Cook for 3-4 minutes, stirring occasionally, until they begin to blister and release their juices.
  6. 6Pour in the balsamic vinegar and chicken broth. Stir to combine, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
  7. 7Return the seared chicken breasts to the skillet, nestling them into the tomato mixture. Spoon some of the sauce over the chicken.
  8. 8Cover the skillet and simmer on medium-low for 6-8 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  9. 9Remove the lid. Place one slice of fresh mozzarella on top of each chicken breast. Cover again for 1-2 minutes until the cheese melts.
  10. 10Remove from heat. Drizzle with balsamic glaze and scatter torn fresh basil leaves over the top.
  11. 11Let rest for 2 minutes before serving directly from the skillet. Spoon extra tomato sauce over each portion.
