Chow mein takes its name from the Cantonese for fried noodles, a quick wok classic built for high heat and bold savor. Thin noodles meet crisp cabbage, bean sprouts, and a glossy soy-oyster sauce that clings to every strand.

Ingredients

  • 12 oz dried chow mein noodles (or fresh yakisoba-style)
  • 8 oz boneless chicken breast or thigh, thinly sliced (or tofu for vegetarian)
  • 3 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 medium carrot, julienned
  • 2 cups green cabbage, shredded
  • 2 cups bean sprouts
  • 4 green onions, cut into 2-inch pieces
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/4 tsp white pepper
  • 2 tbsp water or chicken broth

Instructions

  1. 1Bring a large pot of water to a boil. Cook the chow mein noodles according to package directions until just al dente (usually 2-4 minutes). Drain, rinse under cold water to stop cooking, and toss with oil to prevent sticking. Set aside.
  2. 2In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, sugar, white pepper, and water/broth to make the sauce. Set aside.
  3. 3Heat vegetable oil in a large wok or skillet over high heat until shimmering. Add the sliced chicken and stir-fry for 3-4 minutes until cooked through and lightly browned. Remove chicken to a plate and set aside.
  4. 4Add the remaining oil to the wok. Toss in minced garlic and ginger; stir-fry for 10-15 seconds until fragrant but not burned.
  5. 5Add the julienned carrot and shredded cabbage. Stir-fry for 2 minutes until vegetables begin to soften but remain crisp.
  6. 6Return the cooked chicken (or tofu) to the wok. Add the drained noodles and prepared sauce. Toss everything vigorously for 1-2 minutes so the noodles absorb the sauce evenly.
  7. 7Add the bean sprouts and green onions. Continue stir-frying for another 1 minute until sprouts are just wilted and everything is hot and well combined. Taste and adjust seasoning if needed.
  8. 8Remove from heat. Serve immediately in bowls, optionally garnished with extra sliced green onions or a sprinkle of sesame seeds.
