Ingredients
- 2 lbs ground beef (80/20)
- 2 large eggs
- 1 cup plain breadcrumbs
- 1/2 cup whole milk
- 1 medium (finely diced) yellow onion
- 1/2 (finely diced) green bell pepper
- 1/2 cup ketchup
- 2 Tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 1/2 tsp kosher salt
- 3/4 tsp black pepper
- 2 Tbsp (chopped) fresh parsley
- 3 Tbsp unsalted butter
- 3 Tbsp all-purpose flour
- 2 cups beef broth
- 1 tsp Worcestershire sauce (for gravy)
- 1/4 cup ketchup (for glaze)
Instructions
- 1Preheat oven to 350°F. Line a rimmed baking sheet with foil and lightly grease it.
- 2In a large bowl, whisk together eggs, milk, ketchup, Worcestershire, garlic powder, onion powder, salt, pepper, and parsley.
- 3Add diced onion, diced bell pepper, breadcrumbs, and ground beef. Mix gently with your hands until just combined—do not overmix.
- 4Shape the mixture into a loaf about 9×5 inches on the prepared baking sheet.
- 5Bake for 45 minutes. Remove from oven and spread the remaining ketchup evenly over the top.
- 6Return to oven and bake another 15–20 minutes until internal temperature reaches 160°F.
- 7While the meatloaf finishes baking, make the gravy: Melt butter in a medium saucepan over medium heat.
- 8Whisk in flour and cook 1–2 minutes until golden and nutty smelling.
- 9Slowly whisk in beef broth and Worcestershire. Bring to a simmer and cook 3–4 minutes until thickened. Season with salt and pepper to taste. Keep warm.
- 10Let meatloaf rest 10 minutes before slicing. Serve each slice with a generous spoonful of brown gravy.
