Lobster Roll

Ingredients

  • 1 lb cooked lobster meat (claw, knuckle, tail)
  • 1/3 cup mayonnaise
  • 1 stalk celery
  • 2 green onions
  • 1 tbsp fresh lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 split-top hot dog buns
  • 2 tbsp unsalted butter

Instructions

  1. 1Chop the cooked lobster meat into bite-sized chunks (about 1/2-inch pieces).
  2. 2Finely dice the celery stalk.
  3. 3Thinly slice the green onions, using both white and green parts.
  4. 4In a large mixing bowl, combine the lobster meat, diced celery, sliced green onions, mayonnaise, lemon juice, salt, and black pepper.
  5. 5Gently fold everything together until evenly coated. Taste and adjust seasoning if needed. Avoid overmixing to keep the lobster chunky.
  6. 6Cover the bowl and refrigerate the lobster salad for at least 15 minutes to let flavors meld (up to 2 hours is fine).
  7. 7Melt the butter in a skillet over medium heat.
  8. 8Lightly toast the split-top buns in the melted butter, about 1-2 minutes per side, until golden and warm. You can also brush the buns with melted butter and toast under the broiler for 1 minute.
  9. 9Spoon a generous portion of the chilled lobster salad into each toasted bun (per roll).
  10. 10Serve immediately with potato chips, coleslaw, or lemon wedges on the side.
