Ingredients

  • 1 lb ground turkey
  • 1 cup uncooked white rice
  • 1 can (15 oz) canned black beans
  • 1 cup frozen corn
  • 1 cup salsa
  • 2 cups chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp olive oil

Instructions

  1. 1Heat olive oil in a large deep skillet over medium-high heat.
  2. 2Add ground turkey and cook, breaking up with a spoon, until browned, about 5 minutes.
  3. 3Stir in chili powder, cumin, rice, salsa, broth, drained black beans, and corn.
  4. 4Bring to a boil, then reduce heat to low, cover, and simmer 18–20 minutes until rice is tender.
  5. 5Fluff with a fork, sprinkle cheese on top, cover 2 minutes to melt.
