Ingredients

  • 2 cups old-fashioned rolled oats
  • 2 cups milk
  • 2 large eggs
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 cups mixed berries (fresh or frozen)

Instructions

  1. 1Preheat oven to 375 °F and lightly grease an 8×8-inch baking pan.
  2. 2In a large bowl whisk together milk, eggs, maple syrup, vanilla, cinnamon, baking powder, and salt.
  3. 3Stir in the oats until evenly coated.
  4. 4Fold in berries, then pour mixture into the prepared pan.
  5. 5Scatter remaining berries on top.
  6. 6Bake 35–40 minutes until set and lightly golden.
  7. 7Cool 5 minutes, then cut into 4 squares.
