Ingredients

  • 1 lb ground turkey
  • 3 cups cooked brown rice
  • 1/2 medium (diced) bell pepper
  • 1/2 medium (diced) red onion
  • 1 cup frozen spinach
  • 1/2 can (15 oz, drained and rinsed) canned chickpeas
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp low-sodium soy sauce

Instructions

  1. 1Heat olive oil in a large skillet over medium-high heat.
  2. 2Add ground turkey, garlic powder, paprika, salt, and pepper; cook 5-6 minutes breaking up meat until no longer pink.
  3. 3Add diced bell pepper, red onion, spinach, and chickpeas; cook 4 minutes until vegetables soften.
  4. 4Stir in cooked brown rice and soy sauce; cook 2-3 more minutes until everything is hot and combined.
  5. 5Divide into 3 bowls and serve.
