
Oven-Baked Bacalhau-Style Cod with Tomatoes, Onions, and Olives

Ingredients
- 1.5 lb salted cod
- 3 large yellow onions
- 4 medium ripe tomatoes
- 1/2 cup pitted black olives
- 1/3 cup olive oil
- 4 garlic cloves
- 4 medium boiling potatoes
- 1 tsp black pepper
Instructions
- 1Soak the salted cod overnight, changing water three times. Simmer in fresh water for 12 minutes, drain, and flake into large pieces.
- 2Preheat oven to 375°F. Slice onions into thin rings and potatoes into 1/4-inch rounds. Slice tomatoes into wedges.
- 3In a large baking dish layer half the potatoes, onions, tomatoes, garlic, and olives. Drizzle with half the olive oil and scatter half the flaked cod and black pepper. Repeat layers with remaining ingredients, finishing with a generous drizzle of olive oil.
- 4Cover with foil and bake for 35 minutes. Uncover and bake an additional 15 minutes until potatoes are tender and top is lightly golden. Rest 5 minutes before serving.
