
Seared White Fish with Anchovy-Garlic Pan Sauce and Farro

Ingredients
- 4 (6-oz) fillets white fish fillets
- 1 1/2 cups farro
- 6 anchovy fillets
- 6 garlic cloves
- 5 tbsp extra virgin olive oil
- 1 bay leaf
- 1/4 cup chopped fresh parsley
- 1 lemon
- 3/4 tsp salt
- 1/2 tsp black pepper
Instructions
- 1Cook farro in boiling water with bay leaf and salt for 25 minutes until tender; drain and keep warm.
- 2Pat fish dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear fish 3-4 minutes per side until golden; remove to a plate.
- 3Lower heat, add remaining olive oil, minced garlic and anchovies; cook until anchovies dissolve and garlic is fragrant but not browned.
- 4Return fish to pan, add lemon juice and parsley, spoon sauce over fillets for 1 minute, then serve over farro.
