
Pan-Seared Herring with Brown Butter, Apples, and Wilted Greens

Ingredients
- 8 fresh herring fillets
- 8 tbsp unsalted butter
- 3 medium tart apples
- 2 tsp coarse salt
- 3 shallots
- 1 lb fresh spinach or chard
- 2 tbsp whole-grain mustard
- 1/4 cup fresh dill
Instructions
- 1Pat herring dry and season with coarse salt.
- 2Melt butter in a large skillet over medium-high heat until it begins to brown, then sear herring fillets skin-side down for 3 minutes per side and remove to a plate.
- 3Add remaining butter, sliced shallots, and sliced apples to the same pan and cook until apples soften and butter is nutty brown.
- 4Stir in mustard, greens, and remaining salt until just wilted, then spoon over herring and finish with chopped dill.
