Pan-Seared Herring with Brown Butter, Apples, and Wilted Greens

Ingredients

  • 8 fresh herring fillets
  • 8 tbsp unsalted butter
  • 3 medium tart apples
  • 2 tsp coarse salt
  • 3 shallots
  • 1 lb fresh spinach or chard
  • 2 tbsp whole-grain mustard
  • 1/4 cup fresh dill

Instructions

  1. 1Pat herring dry and season with coarse salt.
  2. 2Melt butter in a large skillet over medium-high heat until it begins to brown, then sear herring fillets skin-side down for 3 minutes per side and remove to a plate.
  3. 3Add remaining butter, sliced shallots, and sliced apples to the same pan and cook until apples soften and butter is nutty brown.
  4. 4Stir in mustard, greens, and remaining salt until just wilted, then spoon over herring and finish with chopped dill.
