Ingredients
- 4 fillets (about 6 oz each) white fish fillets
- 5 tbsp olive oil
- 0.75 cup chopped pitted olives
- 0.5 cup chopped fresh parsley
- 2 tbsp chopped fresh oregano
- 1, finely sliced leek
- 2 tbsp wine vinegar
- 6 cups torn cabbage greens
- 0.75 tsp salt
Instructions
- 1Pat the fish fillets dry and season with half the salt.
- 2Heat olive oil in a large skillet over medium-high heat and sear the fish for 4 minutes per side until golden and cooked through.
- 3While the fish cooks, combine chopped olives, parsley, oregano, sliced leek, wine vinegar, olive oil and remaining salt to make the relish.
- 4Quickly wilt the cabbage greens in the residual skillet heat for 2 minutes.
- 5Serve the seared fish over the greens topped generously with the olive-herb relish.
