Ingredients

  • 2 cups Carolina Gold rice
  • 1 pound fresh okra
  • 2 smoked turkey legs
  • 1 1/2 cups canned crushed tomatoes
  • 1 large yellow onion
  • 1 green bell pepper
  • 4 garlic cloves
  • 4 cups chicken stock
  • 2 tsp hot paprika
  • 1 1/2 tsp kosher salt

Instructions

  1. 1In a large Dutch oven sauté chopped onion, bell pepper, and garlic until softened.
  2. 2Add smoked turkey legs, crushed tomatoes, hot paprika, salt, and stock; bring to a boil.
  3. 3Stir in rice, reduce to low simmer, cover tightly, and cook 20 minutes.
  4. 4Slice okra into 1/2-inch rounds, stir into the pot, re-cover, and cook 15 more minutes until rice is tender and okra is silky; shred turkey meat and mix through before serving.
