Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 medium zucchini, sliced into half-moons
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 3 cups baby spinach
  • 4 cloves garlic, minced
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. 1Pat the shrimp completely dry with paper towels so they sear instead of steam, then season them evenly with salt, black pepper, smoked paprika, and oregano.
  2. 2Heat a large 12-inch nonstick or stainless skillet over medium-high heat until a drop of water sizzles on contact. Add the olive oil and swirl to coat the surface.
  3. 3Add the shrimp in a single layer and cook undisturbed for 2 minutes until the undersides turn pink and lightly golden. Flip and cook 1 to 2 minutes more until just opaque and curled; transfer to a clean plate.
  4. 4In the same skillet, add the sliced zucchini and both bell peppers. Cook, stirring occasionally, for 4 to 5 minutes until the edges begin to soften and pick up light char marks.
  5. 5Stir in the minced garlic and red pepper flakes; cook 30 to 45 seconds until fragrant but not browned.
  6. 6Add the halved cherry tomatoes and cook 2 minutes, gently pressing a few with the back of a spoon so they release juices and create a light pan sauce.
  7. 7Return the shrimp to the skillet along with any accumulated juices. Squeeze in the lemon juice and toss everything together for 1 minute to coat and rewarm the shrimp.
  8. 8Pile the baby spinach on top, cover the skillet for 45 to 60 seconds so the residual heat wilts the leaves, then uncover and fold the spinach through the mixture.
  9. 9Taste and adjust seasoning with an extra pinch of salt or lemon if needed. Sprinkle with chopped parsley, divide into shallow bowls, and serve immediately while hot and bright.
