
Sheet-Pan Gyro Dinner with Peppers

Ingredients
- 3/4 lb ground lamb
- 3/4 lb ground beef
- 1/4 cup olive oil
- 4 cloves minced garlic
- 2 tsp dried oregano
- 1 1/2 tsp ground cumin
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 3/4 tsp kosher salt
- 1 tsp black pepper
- 2 large red bell peppers, sliced
- 1 large yellow bell pepper, sliced
- 1 large red onion, cut into wedges
- 1 pint cherry tomatoes
- 1 cup plain Greek yogurt
- 1/2 cup grated cucumber, drained
- 1 1/2 tbsp lemon juice
- 2 tbsp chopped fresh mint or dill
- 4 pita breads
- 1/3 cup crumbled feta
Instructions
- 1Preheat the oven to 425°F. In a bowl mix the ground lamb and beef with half the olive oil, garlic, oregano, cumin, onion powder, smoked paprika, most of the salt, and black pepper until the spices are evenly distributed.
- 2Spread the seasoned meat mixture in loose clumps across one half of a large rimmed sheet pan so it will brown and crisp rather than steam.
- 3Toss the sliced bell peppers, red onion wedges, and cherry tomatoes with the remaining olive oil and salt on the other half of the pan. Keep vegetables in a single layer for even roasting.
- 4Roast everything for 18 minutes. Break up the meat with a spatula into bite-size gyro-style crumbles, stir the vegetables, then return the pan to the oven for another 10 to 12 minutes until the meat is browned and the peppers are soft with charred edges and the tomatoes have burst.
- 5Meanwhile whisk the Greek yogurt with drained cucumber, lemon juice, mint or dill, and salt into a quick tzatziki. Keep it cold so it contrasts the hot pan.
- 6Warm the pitas in the residual oven heat for 2 minutes or toast them in a skillet until pliable and lightly spotted.
- 7Divide the spiced meat crumbles and roasted peppers, onions, and tomatoes among plates or serve family-style straight from the pan.
- 8Dollop tzatziki generously over each portion, sprinkle feta, and tuck warm pita alongside or underneath so juices soak into the bread. Serve hot for maximum gyro-shop flavor at home.
